Welcome to Kay's Village Recipes! Some believe the heart of the home is in the kitchen, I believe the kitchen is the heart of the village. It takes a “village” to live life to its fullest and it has nothing to do with geography or how large or small a town you live in. My “village” is inhabited by family members, dear friends, co-workers, and the occasional visitor who is in my life for a short period of time. Porcupine Meatballs

When my kids were little, I was always looking for different ways to use inexpensive meats.  This was one of my favorites because it combined the meat and the starch.  All I had to add was a vegetable and I had a very budget friendly meal for my family.  Today’s economy is not much different from those days, and folks are still looking for ways to stretch their food dollars.  I hope you will give this recipe a try, I’m sure your family will love it!  Enjoy!

Ingredients

1 pound ground Beef (or ground Turkey)
1/2 cup uncooked Rice (not instant)
1/4 cup chopped Onion
1/8 teaspoon Garlic Powder
1/2 cup Water
1 teaspoon Salt (optional)
15 ounces Tomato Sauce
2 teaspoon Worcestershire Sauce

Directions

Mix Meat, Rice, Water, Onion and Garlic.  Shape into 1-1/2 inch meatballs.

Place meatballs into an 8x8x2 inch baking dish.

Mix Tomato Sauce and Worcestershire Sauce and pour over the meatballs. 

Cover and bake in 350 degree oven for 45 minutes.  Uncover and bake an additional 15 minutes.
