Original Recipe from: Kay Johnson-Tomblin
This is a nice twist on a traditional meat loaf. Mini, or individual sized wrapped with bacon is a family favorite. Easy to make ahead and you’ve got an easy dinner after a day at work. Leftovers are tasty for lunch the next day, or freeze extras for smaller households. Enjoy!
Ingredients
1.5 pound ground beef
1 cup shredded Cheddar Cheese
½ cup Water
1 Egg
1/4 cup diced Onion
1/4 diced Green Pepper
6 slices Bacon, cut into halves
Directions
Mix all ingredients, except bacon.
Shape mixture into 6 loaves.
Crisscross 2, half-slices Bacon on top of each loaf, tucking ends under each loaf.
Place loaves on a rack in a shallow baking pan. Bake uncovers 50 minutes in 350 degree oven. Broil for 5 minutes at end of baking time (or until Bacon crisps)
